New Opportunities in protein dry fractionation process for pulses
To use of the protein content of pulses optimally, the protein shifting (or dry fractionation) process was developed. Ultra-fine grinding and subsequent sifting produces fractions with a significantly higher protein content than the starting material. This dry fractionation is made even more interesting using new varieties specially bred for this process.
